Whole shoulder for roasting, from our whey-fed pastured pigs. Thaw slowly, then season liberally with salt, pepper, and fresh garlic. Place on a rack over a pan with some water in it (to prevent pan juices from burning). Roast in a 300F oven until golden and meat thermometer reads about 150 at the center. Let the roast sit out of the oven for 30 minutes before carving, to let the juices set.
