Detailed Description

Our pigs were raised in our backyard, dining mostly on whey from our cheese production, and leftover bread. These hearty piggies spent the season happily at Bobolink, and you'll find the fresh pork butt tasty, and nicely marbled.

Thaw slowly, then season liberally with salt, pepper, and fresh garlic. Place on a rack over a pan with some water in it (to prevent pan juices from burning). Roast in a 300F oven until golden and meat thermometer reads about 160 at the center. Let the roast sit out of the oven for 30 minutes before carving, to let the juices set.
