Our pigs were raised in our pastures, dining mostly on whey from our cheese production, and leftover bread. These hearty piggies wintered happily at Bobolink, and you'll find the chops tender, tasty, and nicely marbled.

We recommend cooking them in a hot black iron skillet that has been dusted with coarse salt. Rub them with some raw garlic first, if you like!
