Detailed Description

This starter began with a bottle of Belgian ale in 2003. We have been carrying it forward ever since, by feeding it with water and organic unbleached wheat flour. It differs from many starters in that it is comprised of countless yeasts and beneficial bacteria rather than a single microbe. This offers a nice tangy flavor without being overly sour. It also is a more stable starter, that will survive for awhile if you forget to feed it!
