Bobolink-Foret, ale-washed cheese (available a la carte!)

As this cheese ages, we wash it with Foret (tm), the finest Belgian farmhouse ale. Not a beer-flavored cheese, though: the ale actually transforms the ripening process.

Drumm (available a la carte!)

A semi-firm wheel with a complex flavor that varies with the changing seasons.

Frolic: firm, full-flavored wheel (available at farm store, farmer's markets, and in samplers)

A collaboration between Bobolink and three Amish graziers, this firm cheese has a sweet, nutty flavor, ending in a "tweak".

Jean-Louis: our biggest wheel (available a la carte!)

This 22 lb (+-) wheel is named in honor of the memory of chef Jean-Louis Palladin, who encouraged food artisans to aim for bolder, earthier flavors.
