Bobolink's Wood-Fired Rustic Breads
Bobolink's breads are made from regionally-grown organic grains and other local ingredients. They are cold-risen using natural starters (with a bit of yeast added in a few of the styles), and baked in our wood-fired oven. The combination of slow fermentation and intense heat during baking give our breads an extended shelf-life at room temperature.
The breads that we sell online were wrapped and frozen when perfectly fresh, will arrive thawed and ready to eat, and will be delicious for several days after they arrive.
The plain ciabatta gets its name from the ancient word for "old slipper". Made from unbleached organic wheat flour, whole corn, whole oat, garlic, duck fat, starter, salt, and yeast. Each loaf weighs 1 lb before baking.
