Detailed Description

When we harvest one of our cows, we use everything, and beef tongue is an old family favorite. We simmer it in broth until tender, chill it in the gelled broth, then slice it thin and pack it in half pound vacuum seal pouches. To serve, put the pouch in hot water to warm it through, then make a sandwich: Nina's Medieval Garlic Rye Levain is a great choice!
