This beef is from one of our own bulls. The color is a deep dark crimson, with a rich, beefy flavor. It's a bit on the lean side, but certainly not too lean for a great burger! I just make a small burger, seared it on a salted black pan with some pepper, and ate it on chunk of our Rosemary Epi. Lean, but still quite juicy and flavorful.
